Cinco de Drinko: Ginger Pineapple Margarita Recipe

Ingredients:

1/2 fl. oz. (7.5ml) tequila, preferably añejo or reposado
1 tbsp. (15ml) kosher salt
8 fl. oz. (120ml) tequila, preferably añejo or reposado
2 fl. oz. (30ml) Canton (ginger liquor)
1 fl. oz. (15ml) Triple Sec
1/4 cup pineapple-ginger pureé (recipe follows)
1/2 cup fresh pineapple juice
1/2 cup lime juice, freshly squeezed

Instructions:

1. Pour the 1/2 ounce of tequila into a small saucer. Spread the
kosher salt in a separate small saucer. Dip the rim of a martini or
other wide rimmed glass into the tequila. Lift the glass out of the
tequila and hold it upside down for 10 seconds to allow for slight
evaporation. Next, dip the glass into the salt to coat the rim. Set
aside.
2. Add tequila, Canton, Triple Sec, pineapple-ginger pureé, and fruit juices into a pitcher. Stir until well combined.
3. Add ice to prepared glasses. Divide mixture evenly and serve.
Ingredients for Pineapple-Ginger Pureé:
2 lb. (1kg) frozen pineapple
3 tbsp. (45ml) fresh ginger, finely grated
2 tbsp. (30ml) granulated sugar
1/4 cup dark brown sugar, tightly packed
1/2 tsp. (5ml) fine sea salt
2 tbsp. (30ml) Canton (ginger liquor), or tequila

Instructions:

1. Combine all ingredients, except for the Canton, in a 12″
non-stick pan and bring to a boil over high heat. Stir occasionally
until most of the liquid has evaporated.
2. Reduce heat to medium and continue to cook until pineapple is
soft and caramelized. Remove from heat and stir in Canton until well
combined. Cool slightly and pureé in a blender or food processor.



Two of my favorite things — pineapple and ginger combined into a delicious cocktail?  Yes please. 
If you want to avoid the crowds this weekend but want celebrate Cinco de Mayo, this is the perfect recipe to feel like you’re at your very own fiesta!
