- Fresh-cut kernels from 4 ears of sweet corn
- 1 cup of thinly sliced radishes
- ½ cup fresh cilantro, chopped
- Juice from 2 limes
- 1½ tsp. paprika
- ½ tsp. cumin
- Pinch of salt and pepper to taste
- Combine all the ingredients in a large mixing bowl and toss to mix well.
