Ever since Ashley from Adventures of Newlyweds (by the way, if you haven’t heard of her blog…you should check it out. She is one of my faves!) posted her Pesto Porkloin recipe, I knew I had to try it. It looked too easy too be true, and J and I both LOVE anything smothered in pesto and/or lemon.
So, I tried my hand at the pesto porkloin. And smother it with pesto, I did. (No drizzle here…let’s just say I’m no Giada!)
You will need:
-A tablespoon of Olive Oil
-One Garlic clove
-Store bought pesto from your deli
-One Lemon
-Porkloin (I got 4 for about $7)
Heat the skillet on medium-high with the table spoon of olive oil, then add your porkloin. I added a bit of cayenne pepper and salt for flavor.
Mince the garlic clove and add to the skillet. Heat the porkloin for about five to eight minutes on each side, or until it is no longer pink. (Ashley used a thermometer, but I just made a little incision to see if the inside was pink or not.)
Mix the juice from your lemon with the pesto sauce that you bought. Mine was around $3.50.
Finally, drizzle (or pour…like me) on your porkloin and your favorite sides! I did a little bow-tie pasta with a strawberry & spinach balsamic salad. (Strawberries were on sale for $0.99!)
And there you have it! The meal took no longer than 20 minutes to prepare AND it was really cheap. The porkloin and pesto alone were no more than $12 for all four, and the sides were things I already had in the fridge!
