Trader Joe’s how dare you…

Seriously how dare you.  I tend to pick up a few pre-packaged salads from Trader Joe’s for the workweek when I can.  Priced at around $3.99 they are much cheaper than eating out (granted not as cheap as making your own salad, but let’s get real… sometimes life gets in the way and you need to buy the pre-packaged).
My absolute favorite salad is the Kale & Edamame Bistro, although I recently came to the abrupt conclusion that my favorite part about it is the dressing.  I thought to myself if I could find that dressing, I could buy the kale and toppings and save some dough.
Lemon Herb.  What a dream.  Although I should have known better.  The creamy deliciousness was too good to be true. 
In my hunt for the recipe, I found something I didn’t want to see.  The amount of fat in the salad… is…. 38 grams.
What the fudge Trader Joes?!  Your trickery is unjust…why must you package the Kale and Edamame Bistro salad to look so healthy?  No cheese, pure veggies, lemon herb dressing… (lemon is a fruit and herbs are good for you.. right?)
Yes, I take partial responsibility for not looking at the nutritional facts… but at the same time I hate to be one of “those” (calorie counter) people.  I like to eat what I like and I don’t want to be consumed by the numbers. 
I guess the moral of the story is if a salad dressing seems too delicious to be true…It probably is.
My most favorite meal of all time, THE Big Mac (I’m not joking, it is my favorite) is only 29 grams
Sorry TJ, I’ll take ze Big Mac and spare myself the 9 extra grams.
Here is my healthy version of the salad:

All of the ingredients cost no more than $12, which is already a much better deal than buying the pre-packaged.  Especially since the dried cranberries and almonds will last through a few bags of lettuce.

The dressing:
 -2 parts oil
-2 parts fresh lemon juice
-Splash of vinegar
-Seasoning

(I used a lot of lemon juice because I like the flavor to be full of citrus.)

I’m still going to aim to make a more creamy lemon dressing that’s healthy, and when I do I’ll be sure to share.  Although, if you have any good recipes, do share!
