Easy Weeknight Meal – Cuban Rice & Bean Salad

Ingredients:

1 tbsp. FRENCH’S® Classic Yellow® Mustard
3 tbsp. olive oil
3 tbsp. apple cider vinegar
3 tbsp. mayonnaise
2 tbsp. chopped jalapenos
1 tbsp. chopped cilantro leaves
1/2 tsp. ground cumin
1 tsp. FRANK’S® REDHOT® Original Cayenne Pepper Sauce
2 cups cooked white rice
1 (15 oz.) can black beans, drained and rinsed
1 cup each julienne bell peppers and whole kernel corn

Directions:

WHISK together mustard, vinegar, mayonnaise, jalapenos, cilantro, cumin and Frank’s RedHot Sauce in large bowl.
STIR in rice, black beans, bell peppers and corn; toss to blend. Cover and refrigerate until chilled. Garnish as desired.

I am all about easy and lightweight meals in the summer time.  Ain’t nobody got time to cook!  I love this recipe because you most likely already have most of this stuff in your fridge/pantry.  It only requires 3 fresh vegetable ingredients, and I think you could easily sub the peppers for carrots or another veggie if you don’t have bell peppers.

When I think of French’s mustard, I think of summer barbecues and hot dogs.  I love that this recipe gives me an excuse to use my mustard in something other than on an item off the grill – and it adds the perfect tang to the dressing.  I will definitely be serving this salad at my next summer dinner party for a hearty & healthy option.

We ate this salad cold, but I can’t help but wonder how delicious it would be if it was heated up!  If any of you try it out, let me know!
