Girl-on-the-Go Weeknight Dinner

This has become a weekly staple for me, so I figured it was time to share it with you all. 
In a perfect world I’d test new recipes every night, and J and I would sit down for a delicious home-cooked meal on a regular basis.  That’s most certainly a fantasy because many nights I come home too exhausted to even think about making something.  Whenever it’s just me for dinner, this is my go-to meal (J is not a brussels sprouts fan).
I place half of both the risotto and brussels sprouts in a container and eat it for lunch the next day.  I get one dinner and one lunch out of these for less than $7.  Doing this really helps me with portion control because Lord knows if that whole bag of cooked risotto was in front of my face it’d be devoured in minutes.  When it’s in the fridge it forces me to wait until the next day. 
The risotto is the perfect balance of creamy & comforting without being too rich.  It takes all of 8 mintues to make and the brussels sprouts heat up in 2 1/2 minutes.  (I cook them in the last few minutes of the risotto).

    Right now my go to has been a package of cooked sausage (chicken or chorizo)sliced, with a can of diced tomatoes, a can of canolini beans, and a bunch of spinach (or kale). Toss everything in a pan together and heat it up. If im feeling ambitious i will make pasta instead of beans but cans are so easy! and its also pretty darn healthy.

    Contraversial choosing brussle sprouts! (that may be because there's a huge debate in every UK household on Christmas day about them)

    At the moment I'm loving warm salads with grilled chicken. I've always been useless at using up all my salad stuff, so a lot got chucked away. But by cooking the salad (even the lettuce) with a little sesame seed oil makes it delicious!

    Love this post! You definitely keep doing these since I always struggle with either picking up takeout or eating late because I don't get home from class until after 6:30 and by that point I'm starving! Definitely going to try this out 🙂

    I'd pretty much sell my soul to have a Trader Joes near my apartment. Sigh. But brussles sprouts are my FAVORITE–I love roasting them until they're super crispy.

    What a simple great way to have a delicious meal. Our market makes little chicken roasters (they look like tiny thanksgiving turkeys), and they're all cooked and seasoned. It's a perfect meal for two!

    while waiting for my kitchen to be finished being installed we've been doing this kind of thing which is truly unlike me since I usually stick to homemade. either way it's made me realize how many great affordable frozen meals there are. thanks for sharing your favs. I love rissotto and have just started to explore brussel sprouts so its a perfect meal in my opinion. xx. gigi. http://www.gigikkitchen.com

    I love those pre-packaged brussel sprouts as well! We like to quickly pan-fry them and then drizzle with a little bit of truffle oil!

    Isn't Trader Joe's the best?! Brussels sprouts are one of my staples, too – I love roasting them, sometimes with a little pancetta 🙂
