Healthy Berry Cobbler with CW by CorningWare & Giveaway!

I am not one to shy away from color when it comes to dishware, so I was thrilled to get the opportunity to try the new CW by CorningWare bakeware.  The pieces are colorful and inspiring, and are functional at the same time.  They nest together for compact storage – which is essential when you live in an apartment with a kitchen the size of some people’s closet!

I love that they’re pretty, so I can cook in them and leave the dish in the pan for serving to friends while entertaining.  Preparing multiple dishes stresses me out, so this is a nice little time-saver.

The colorful pieces reminded me of a colorful dish like berry cobbler, so that’s exactly what I made to take them for their first spin.

Healthy Berry Cobbler (adapted from Wellness Mama)

Ingredients:
-4 cups of assorted berries (frozen)
-1 cup almond flour
-1/4 cup coconut oil (or butter)
-1 tsp vanilla
-optional: stevia, organic honey or maple syrup to sweeten

Instructions:
1. Preheat oven to 375 degrees (the CW by CorningWare dishes are oven & microwave safe)
2. Grease a large baking dish with coconut oil or butter.
3. Place berries in baking dish.
4. Combine almond flour, coconut oil, butter, and vanilla with your hands until it makes a crumbly topping.  (If using stevia to sweeten, add at this point).
5. Using hands, crumble topping over berries.
6. Put dish in oven to cook for 40 minutes.
7. Let cool.
8. Drizzle honey if desired.

I love this dish because it’s sweet & tart but healthy, making it okay for breakfast and dessert.  I also love how colorful it is – just like my new bakeware!

    This looks absolutely delicious and best of all its healthy too. If I had this to wake up to for breakfast maybe I wouldn't hate getting up in the morning 😉
