Brie is one of my favorite cheeses, so I’ll find an excuse to put it on anything! This recipe is a really quick and easy one that makes it seem like you slaved away in the kitchen all day. Using frozen waffles saves time, but it’s so packed with flavor you would swear it was made from scratch.

This would be a great breakfast to make while you have company over, as it won’t take away from your time to socialize, but will be sure to impress.
Lemon, Blueberry & Brie Waffle Sandwiches
Cook time: 10 min. | Prep time: 10 min. | Serves: 1 | Yields: 4 servings
Ingredients:
1 ½ cups blueberries
1 tablespoon lemon zest
2 tablespoons freshly squeezed lemon juice
1 tablespoon Simple Truth sugar
2 tablespoons Simple Truth unsalted butter
8 Simple Truth whole grain waffles
4 oz. brie cheese
Directions:
1. Add blueberries, lemon zest, lemon juice and sugar to a sauce pot and heat over medium heat.
2. Once it’s at a simmer, reduce the heat to low. Stir occasionally until the sauce has thickened (should take about 5 minutes).
3. Remove the pot from heat.
4. Thinly slice the brie cheese. Cut enough slices to cover the waffle, and put them on the waffle. Scoop the blueberry sauce onto the brie, and top it with another waffle to make a sandwich.
5. Melt butter into a frying pan over medium-high heat, and place the waffle sandwich into the pan.
6. Grill until the cheese is completely melted (approximately 3 minutes per side), and the waffle is golden brown.
7. Drizzle maple syrup on top of the sandwich (optional).
