I don’t know about you, but I get
sick of eating the same old lunches during the week. I try to get creative
and prepare something that doesn’t take a lot of time, but that’s also healthy
and hearty.
Chickpeas and avocados are a
delicious combo, and I’m surprised that I don’t see them paired more often. I
added very traditional toppings of lettuce, red onion and tomato to this
sandwich, but you could easily get more creative. I’m thinking maybe black
olives and pepperoncini for a more Greek take on it!

Don’t underestimate the convenience
of this lunch. I’m not a fan of soggy sandwiches, but you can put the avocado
and chickpea mash into a container and bag the other ingredients. Then all you
have to do is add the mash when you’re ready for lunch. I love anything
you can make ahead of time to save unnecessary angst in the mornings.

I totally agree that chickpeas and avocado are a perfect combo! I also love pairing these with feta cheese and sweet potato for an ultimate, heavenly taste mix!
