This weekend J and I scored a barely-used blender that has become my best friend.
With the recent move, we have been eating so unhealthy (aka whatever is cheap and fast) and my body has literally been craving fruits and vegetables.
I have been making trips to all of the local smoothie places to get a quick & healthy acai bowl for lunch when I can. I choose the ones that have vegetables in them (celery, kale, spinach) because it is basically like a salad, with the consistency & taste of a smoothie. SUCH a nice change from bland lettuce.
The problem? These bowls run about $8 a bowl minimum and it’s not a friendly habit for my wallet.
The solution? Make my own. And I have to say, I think I’m right up there with my fave smoothie stores ;). Toot toot. (<–my own horn)
You will need:
- Greens of your choice: I chose spinach, but you can use kale, celery, even squash.
- Frozen fruit: Mixed berries, Strawberries (It lasts MUCH longer and tastes just as good)
- Fresh Bananas
- Acai Juice (I found the one mixed with pomegranate was cheaper, and tastes about the same!)
- Soy milk (Optional)
- Granola with Hemp
I spent about $25 on ingredients that will probably last me about 12 smoothie bowls, and that money would have only paid for 3 from the smoothie shops.
I started with a handful of spinach. To be honest, you can go crazy on the greens, and you still won’t taste them. The fruit cancels it out because spinach hardly has a taste to begin with.
A handful and a half of frozen berries.
1/3 of a banana.
I eyed the acai juice, but I would say about a half a cup.
BLEND
In the midst of my blending, I realized it was still very thick. I decided to add soy milk to mute the tangyness and to help make it more liquid. If you want some extra kick, or don’t like soy milk, add acai juice.
Tip: Be careful not to overblend. There is a fine line between smoothie bowl consistency and smoothie consistency, and if you cross that line, you will be consuming acai green soup instead.
Once you have blended, pour it into a bowl, slice the rest of your banana that you didn’t use, place it on top, and pour granola to cover the top.
Last, enjoy your healthy meal (or snack) and reap the benefits of feeling good!
