Party Party Party Snacks

Hey all.

So I know I left you all with the impression that I was going to tackle the art of making cakepops, but unfortunately that didn’t happen. I wanted to make them for a potluck at work on Friday but my roomie Katie’s birthday was on Thursday night, so I needed to make something quick and easy! I decided to go with the classic party snack that I’ve been making for as long as I can remember. They are almost ALWAYS a hit.

Mexican Pinwheels:

Ingredients:
(You can alter the amount of each ingredient you use, if you only have one container of cream cheese already in your fridge, just use that. It will just make a smaller amount of pinwheels. Save where you can!)

-> 2 (8 oz.) packages of cream cheese
-> Freshly cut chives

-> 1 package flour tortillas (Mission Tortillas makes several colors and 
     flavors, I used green for a pop of color)
-> 1 4 oz. jar diced pimentos, drained
-> 1 4 oz. can diced green chilies
-> 1 (2 1/4 oz. ) can sliced black olives, drained
-> 1 cup shredded cheddar cheese

  
Then when you are ready to begin, you mix it all together in a big bowl and spread it evenly over a tortilla.




Then you roll up the tortilla and wrap it in saran wrap. I unfortunately only had foil, and I wouldn’t recommend using it. It trapped a lot of moisture. They were still delicious.

After you wrap it in saran wrap, place it in the fridge for as long as you can. I like to do it overnight, so the cheese has time to harden a bit. After you chill the wraps, unwrap the saran wrap and cut off the ends, then slice the rest into equal pieces, and voila! You are ready to serve. You could serve these with salsa or guacamole for an extra kick.

The second recipe I want to share with you guys is courtesy of my roommate Stephanie. She made these AMAZING jello shooters for Katie’s birthday party…

Lemon Jello Shooters:

  
Ingredients: 

-> 8 Large lemons
-> 2 packages lemon jello 
-> 1 cup boiling water
-> 1 cup lemon vodka
-> 1/2 cup lemon juice
-> 1/2 cup ice cold water



Then to begin, you need to scoop the lemon peels free of the lemon. Cut them in half lengthwise, and use a spoon to scoop out the core of the lemon, leaving the peel.

Then, use the pulp you just scooped for juicing. While you’re doing this, bring the cup of water to a boil.

In a large bowl, combine the boiling water with two boxes of jello. Then add your lemon juice, vodka and cold water. Then, pour the mixture into the lemon peels! Make sure they are in the fridge for a MINIMUM of four hours. Ours weren’t in there for quite that long, so they ended up a liquidy jello but it was still delish. Probably easier to consume also ;). If you wish, you can cut them into slices so they look like little lemon slices like so:

And there you have it kids! Bring one of these treats to the next barbecue you go to and you have yourself a quick, inexpensive, party hit! 🙂
