Pesto, Avocado & Proscuitto Crostinis
INGREDIENTS
- 1 loaf french bread, cut into thin slices
- 2 tbsp olive oil
- 4 ounces goat cheese
- 2 tablespoons fresh pesto
- 2 Hass avocados
- 1 lemon, juiced
- 4 ounces thinly sliced proscuitto
- salt and freshly cracked black pepper to taste
INSTRUCTIONS
- Preheat the oven to 350 degrees F.
- Place the sliced bread on a baking sheet and drizzle with olive oil. Toast the bread in the oven for 10-15 minutes until golden brown. Remove from the oven and let cool.
- In a small bowl, combine the goat cheese and pesto until evenly combined. Spoon a small spoonful on each of the crostinis and spread it on the bread.
- In another small bowl. mash together the avocado and lemon juice. Season the mixture with salt and pepper.
- Place a little spoonful on top of the goat cheese crostinis followed by a small piece of the prosciutto
- Dust the tops with freshly cracked black pepper and serve immediately.
Goat CHeese, Apple & HOney Crostinis
INGREDIENTS
- 1 baguette, sliced into Β½ inch pieces
- Olive oil
- Kosher salt
- Coast black pepper
- 1 clove garlic
- 6 ounces goat cheese
- 1 teaspoon red chili pepper flakes
- 1-2 apples (Fuji or granny smith work great!)
- ΒΌ cup walnuts, diced
- Honey
INSTRUCTIONS
- Preheat oven to broiler setting.
- First, drizzle baguette slices with olive oil, salt and pepper. Cook until the broiler for about 1 minute per side until brown.
- Meanwhile, slice apple into thin slices.
- Once the bread is ready, immediately rub on garlic.
- Let cool slightly, and spread with goat cheese and sprinkle with red chili pepper flakes if desired. I desired!
- Top with apple slices, pomegranate seeds (or dried cranberries), walnuts and honey.
Mmmm, that first recipe sounds and looks so delicious! I need to try it because I'm always looking for the new ways how to "eat" my avocados! π
