Quinoa Greek Salad

Salad Ingredients:
-1 cup cooked Quinoa (about 1/4 a cup uncooked)
-Small handful of mixed greens
-1/2 Peruvian Cucumber
-2 Hearts of Palm
-Red Onion
-Kalamata Olives
-Cherry Tomatoes
-Feta Cheese (I didn’t use any, but it would be delicious)
Dressing:
-2 Tablespoons Red Wine Vinegar
– 1/2 Tablespoon Dijon Mustard (or more if you like a little spice)
-1 Tablespoon EVOO
(Finely chop all the veggies, then combine with the cooked quinoa.)
Lately I’ve been trying to incorporate more colorful foods into my diet.  I came up with this “greek salad” of sorts using all of my favorite ingredients. 
I hate salads with large leafy greens.  I feel like they are messy, and you almost have to smother them with dressing to ensure all the leaves have flavor.  Do you guys feel that way too?  To avoid that, I chopped all the lettuce and ingredients making it really easy to eat and you can really taste the dressing (which happens to be my fave). 
Quinoa has a lot of benefits such as protein, fiber, and iron, so I feel it’s important to incorporate it into an all-veggie meal.  It is also filling if your stomach is a bottomless pit (like my own).

    YUM! I make a rendition of this for myself and B for our workweek lunches. Love these added ingredients and that dressing! We typically like to make it to the farmer's market to get our favorite cilantro pesto for a kick, but our guy hasn't been there the past couple times! sad…

    I've been looking for quinoa recipes, so I will definitely be trying this! I also have a bottomless pit for a stomach, so lettuce salads don't cut it haha 🙂
