Weeknight Meal: Mustard Salmon & Crispy Brussels Sprouts

J and I have been trying to eat in more when possible, since it saves so much more money.  One thing I think I can make better at home is fish.  When we make fish at home we spend half as much as we would in a restaurant. 
I started by making this mustard sauce with Basil Mustard from Trader Joe’s, a little bit of almond milk (enough to make it a little runny), and some dill seasoning.

I pre-heated the oven to 450F, drizzled the sauce over the fresh salmon, squeezed lemon juice on top, and placed in the oven for about 13 minutes.  (The salmon cost about $11 from Trader Joe’s).

Now onto the brussels sprouts.  If you have been reading this blog for awhile, you know I love brussels sprouts.  I don’t go more than 3 days without eating them in some way, shape or form.  It’s an addiction – and I guess it’s not a bad one to have.
I actually had something similar from a food truck, which inspired me to try this at home.
You will need:
-Brussels Sprouts (washed and cleaned)
-Dijon Mustard
-Capers
-Fresh limes

First cut the brussels sprouts into halves, or quarters depending on how big or small they are.

Fill the pan with about an inch and a half of olive oil, and turn on high heat. 
Step back, and test a sprout in the oil once you see it bubbling.  If it starts to to sizzle, throw the rest of them in, and cover.  Let them cook like this for about 2 minutes and 30 seconds, stirring if you can do so safely.  Then throw in a spoonful of capers and let them cook for about 30 seconds – a minute.  Remove from heat.

In a separate bowl combine the juice of one lime, with a tablespoon of dijon mustard (you can double this if you are making the whole bag). 
Scoop the brussels sprouts out and mix them in a separate bowl with the dijon mustard and lime juice sauce you just prepared. 
I know it sounds like a really odd combination… I love dijon mustard & lime juice separately but wouldn’t think to put them together.  Just trust me, the combination is amazing.  It’s the perfect balance of spicy and sour.

Then you are ready to plate it!  Just drizzle a bit of extra mustard-dill sauce on the salmon if you please, and eat up.

This fed both J and I, and I had extras for lunch to bring to work the the next day.  I would say it ended up being about $5 a serving for the entire meal.
